kohlrabi slaw
Peel kohlrabi and shred using grater or food processor. Put in bowl. Slice radishes and scapes and chop cilantro, add half of each in bowl. Add lemon juice, lime juice, ACV, maple syrup. Add salt and pepper to taste. Toss well. To garnish, add remaining cilantro on top, then radishes and scapes. Best served chilled. Make day ahead for deeper flavor.
